Bio.For.Mì
A question that is often asked and sparks debates across the globe is: What is the right food to eat, and what is harmful? How do I know if a food is good for me, or if plant-based is better than animal-based, and so on?
In our abundant society, we find all kinds of products in stores: fruits and vegetables, grains, legumes, fish, fresh and preserved meats, eggs, dairy products, and much more. We are familiar with the classic dietary style of a first course, second course, side dish, bread, and fruit. Recipes and diets that incorporate legumes and whole grains as a plant-based protein source in place of animal proteins are easy to find.
However, when we look for a nutritious food made with nuts or one rich in probiotic microorganisms to include in a vegan diet—or simply to find alternatives to meat and cheese—we struggle to find something that is at once tasty, appealing, and nutritious.
Bio.For.Mì was created with this purpose: to offer a range of products made from nuts—such as cashews or almonds—or legumes like soy, made tasty, nutritious, and active through careful transformations carried out by lactic acid bacteria or precise maturation processes.
Cashews are delicious nuts, rich in particularly interesting nutrients, which we will discuss later. Soy is a widely used legume with unique characteristics, though we remain committed to staying away from GMO varieties promoted by the agri-food industry. We have already introduced almonds and lentils into our ingredients, and soon we will be offering new products made with chickpeas.
Why Bio?
Because all our ingredients are certified organic, whether sourced from Italy or abroad, ensuring the highest levels of cleanliness and quality, while also promoting respect for the environment and ecosystems. “Bio” also means “life,” and in this sense, we offer both raw (crudist) products and those transformed by lactic acid bacteria, making them true probiotic foods. Recent studies—which we will explore further—confirm the importance of the microbiota, the microbial population in our intestines, on which much of our health and well-being depend.
Why For Mì?
Because these are innovative products, unlike anything we’ve traditionally known: they are not legumes as we typically think of them, nor are they yogurt or cheese. They have a distinctive, personalized flavor, whether strong or mild, and can be used similarly to cheese but with entirely different characteristics. They contain no milk or derivatives, no animal components or fats, and no gluten from grains or flours.
Our product lines include:
- Lo Stagionato
- I Crudisti
- Il Gud e il Mandì
- L’Affumicato
- La Casarella
- La Cremosella
- La Pazzarella
To top it off, we offer lasagne with lentil ragù, enriched with Casarella and Cremosella, creating a unique and exquisite product.
The Biogermogli
Sprouts are the germinated seeds of cereals, legumes, and other plant species. They are harvested before they grow into fully developed plants, making them ready to eat. Sprouts support the vital processes of our body. During germination, the nutritional content increases exponentially, making sprouts richer in minerals, vitamins, proteins, enzymes, and antioxidants than the plants from which the seeds originate. For example, the vitamins contained in a seed can increase by up to 100% after germination.
Sprouts have anti-cancer, anti-free radical, cholesterol-lowering, and blood sugar-reducing properties. This is a highly bioavailable nutritional powerhouse, thanks to the germination process. They are loaded with trace elements, Omega-3 fatty acids, and essential amino acids. Additionally, sprouts are high in dietary fiber but contain fewer calories than fully grown vegetables or legumes.
The best way to benefit from all their properties is to consume sprouts raw. They can be paired with almost any food since there are many types of sprouts, each with its unique flavor profile.
We have artisanal crafted delicious combinations with vegetables, berries, and precious seeds. The base is made from sprouted buckwheat and millet, which are dried and then combined with pre-sprouted almonds, flax seeds, sunflower seeds, and vegetables. Through an ancient dehydration process at temperatures below 42°C, cooking is avoided, and the countless nutritional values of the ingredients remain intact.
The pseudo-cereals and seeds used, naturally gluten-free, provide exceptional benefits thanks to germination, which, as mentioned, releases numerous amino acids, enzymes, vitamins, and trace elements.
Raw Food
Raw food is a diet based on natural foods, free from alterations caused by industrial processing or cooking. It is important to consume as many raw or dehydrated foods as possible because cooking destroys the enzymes naturally present in food, forcing our bodies to produce their own digestive enzymes at a significant energy cost. Moreover, the enzymes produced by the body are not as effective as those naturally present in foods.
Cooking also destroys vitamins and beneficial microorganisms that help restore intestinal flora while lowering the food’s pH, making it acidic. The body, however, thrives on alkaline foods, as excessive acidity increases susceptibility to diseases.
By using slow dehydration at low temperatures, we incorporate whole millet sprouts (unique in Italy) and buckwheat sprouts into our products, creating high-end bars and naturally protein-rich crackers thanks to the predominant use of oil seeds and vegetables.
The entire process is GLUTEN-FREE, RAW, and VEGAN. Each production stage is constantly monitored through a strict quality control system, supported not only by external laboratories but also by dedicated internal professionals.
