Ingredients for 4:
- 1 cup of brown (or white) rice
- 1 pack of lentil sprouts (or legumes)
- extra virgin olive oil
- soy sauce (tamari)
Procedure:
You can also prepare this recipe with white rice, but since everyone knows how to cook it, we will talk about brown rice:
Pour the rice into a colander and rinse it under running water. For 1 cup of rice you need 2 and a half cups full of water. Pour the water and rice into a saucepan, add a little salt, cover and bring to a boil. Lower the heat and cook for 40-50 minutes in a normal pot, or for 20-25 minutes in a pressure cooker (calculating the time from the whistle).
When there are 5 minutes left to cook the rice, heat a drizzle of oil in a pan. When it is hot, sauté the sprouts for a few minutes keeping them moving, just to blanch them. Once the gas is off, add a drizzle of soy sauce to the red lentil sprouts (or the mix of legumes) and add it all to the rice. If you want, you can add vegetables to taste. Et voila!
It is very simple but delicious! Everyone likes it, even children 🙂
It provides the right amount of protein and carbohydrates, and the enzymes of the sprouts help digestion.
Rice or other cereals cooked with this system keep their mineral salts and vitamins intact, because the water is completely absorbed and is not thrown away. The cooked cereals can then be seasoned to taste or accompanied by vegetables, legumes, cheeses; they can also be used as a base for ultra-fast risottos or for other preparations (croquettes, fillings, rolls, salads and so on).
