This is a nutritious and easy dish to prepare and take to work for example.
The dish can be enriched with legume sprouts, chicken nuggets or ham, you choose! But radish sprouts are a must. They are crunchy, fresh and slightly spicy. They give a very original touch!
INGREDIENTS
(for 2-3 people)
- 250 g mixed bulgur and red quinoa
- 200 g of Brussels sprouts (or another seasonal vegetable)
- 1 carrot
- Radish sprouts
- Sweet paprika
- Turmeric
- Extra virgin olive oil
- Salt (or maybe soy sauce, or gomasio)
- Pepper / chilli
Instructions:
Cook the cereals in plenty of slightly salted water; it only takes 10-15 minutes. Drain them with a colander that has very small holes, add a drizzle of oil and set aside.
Cut the Brussels sprouts in half, after washing them, and cut the peeled carrot into sticks. Place the vegetables in a wok pan with a steamer grill. At the bottom of the pan pour two glasses of water, cover and cook for 10 minutes.
Spread the cooked cereals on a flat plate, then garnish with the steamed vegetables, sprouts, sweet paprika and turmeric, a drizzle of oil and a pinch of pepper or chilli.
